My New Year with BEETS

   

My acupuncturist ordered me to drink a glass of beet juice every day for the next month!  Well he didn't order me to but he said it would help surely help with my detox - which I need after the month of wining and dining during the holidays. 

Beets are a unique source of phytonutrients called betalains. Betanin and Vulgaxanthin (sounds like Vulcan vocabulary from Star Trek) are two betalains from beets. Both have been shown to provide antioxidant, anti-inflammatory, and detoxification support.  The stems of chard or rhubarb also have betalains but not as high a concentration as  in beets.  The peel and flesh of beets can provide you with awesome health benefits. Beauty. 

I juice two medium beets a day with the greens!  I have to say... I am noticing a lighter more vibrant feeling in my body!   Try it - you may like it.  Just Beet it!
